Hawaiian Butter Mochi with Blue Star® Mochiko Sweet Rice Flour
Butter mochi is a favorite dessert in Hawaii, loved for its golden crust, buttery flavor, and wonderfully chewy center. Made with sweet rice flour and coconut milk, this baked treat brings together simple ingredients to create a dessert that's rich, satisfying, and easy to share.
Unlike traditional cakes made with wheat flour, butter mochi gets its signature texture from sweet rice flour. Blue Star® Mochiko Sweet Rice Flour provides the characteristic soft, chewy consistency that makes this dessert so distinctive.
Perfect for family gatherings, celebrations, or an afternoon treat, butter mochi is a delicious way to experience the versatility of mochiko.
Ingredients
Makes approximately 24 squares
-
1 box (16 oz) Blue Star® Mochiko Sweet Rice Flour
-
2 cups granulated sugar
-
2 teaspoons baking powder
-
½ teaspoon salt
-
1 can (13.5 oz) unsweetened coconut milk
-
1 can (12 oz) evaporated milk
-
1 cup unsalted butter, melted
-
5 large eggs
-
1 teaspoon vanilla extract
-
¼ cup shredded coconut (optional)
How to Make Hawaiian Butter Mochi
1. Prepare the Oven and Baking Dish
Preheat your oven to 350°F. Lightly grease a 9 × 13-inch baking dish with butter or cooking spray to help prevent sticking.
2. Combine the Dry Ingredients
In a large mixing bowl, combine the Blue Star® Mochiko Sweet Rice Flour, sugar, baking powder, and salt. Mix thoroughly to distribute the ingredients evenly.
3. Mix the Wet Ingredients
In a separate bowl, whisk together the coconut milk, evaporated milk, melted butter, eggs, and vanilla extract until well combined.
4. Prepare the Batter
Gradually add the wet mixture to the dry ingredients, stirring until the batter becomes smooth and evenly blended.
The mixture will have a relatively fluid consistency, which is normal for butter mochi.
5. Bake Until Golden
Transfer the batter to your prepared baking dish, spreading it evenly. For additional coconut flavor, sprinkle shredded coconut across the surface before baking.
Bake for approximately 60 minutes, or until the top develops a golden color and the center is set.
6. Cool and Serve
Allow the butter mochi to cool completely before slicing. This helps the texture firm up and makes it easier to cut into individual squares.
Once cooled, slice into approximately 24 portions and enjoy.
What Makes Butter Mochi Different?
The secret to butter mochi's distinctive texture is mochiko, a flour made from sweet rice.
Unlike conventional rice flour, sweet rice flour produces a soft, elastic, and pleasantly chewy texture when cooked. This makes it especially well suited for traditional mochi, butter mochi, and a variety of other desserts.
Despite its name, sweet rice flour does not contain added sugar. The name refers to the type of rice from which it is milled.
Blue Star® Mochiko Sweet Rice Flour is naturally gluten-free and offers a versatile foundation for both traditional recipes and modern baking.
